Port Wine Sauce

Port Wine Sauce

This sauce is perfect for serving with kangaroo and other game meats.

Ingredients
  • 4 tablespoons butter
  • 3 whole shallots, finely sliced
  • 150g button mushrooms, finely sliced
  • 50g blackcurrents or cranberries
  • 1 cup red port (aged if possible)
  • 1 large piece of orange zest
  • 1¼ cups beef stock
  • Salt and black cracked pepper

Method

This sauce is perfect for serving with kangaroo and other game meats.

Melt half the butter in a small saucepan. Add the shallots and sweat until soft, then add the mushrooms and cook gently for 3 minutes. Pour in the port, add the orange zest and reduce by half.

Add the stock and simmer for 25min, skimming the surface if necessary. Pass the sauce through a strainer, add the remaining butter, gently stir to combine and season to taste with salt and pepper.

Optional; you can use approx 50g of blueberries, blackberries or cranberries and add in with the mushrooms. Continue recipe as above.
